My inspiration for Paella first and fore most is really Spanish cooking or Mexican rice but completely different.

Basic Paella Recipe
Ingredients:
Mussels- fresh or frozen
Turmeric powder
Smoky paprika
Green peas- frozen or can
Sausage- Andouille preferably
No salt but peppercorn for taste
Vegetable stock low sodium- low sodium if you find it
Shrimp- peeled
Parsley- for garnish
Olive oil or avocado oil
Uncooked white Rice
Bell peppers- optional for color
Tomato sauce
Garlic
Directions:
Heat the pan and add olive oil then sautee garlic and add your cut up sausages when you think its hot
Add Tomato sauce then stir also add your vegetable stock
Add your rice also add your turmeric smoky paprika
Keep stirring then leave the pan covered for when the rice is cooked usually 8-9 minutes
Now this is important add the mussel one by around whitle adding each shrimp and sausage to each other neatly then add your peas all over the pan evenly and bell peppers also garnish it with chooped parsley and cover it again
You'll know it's cooked when the mussels start to open and you see a yellow color on your rice
